Vineyards: Grapes are selected in plots of 2.5 hectares in sandy loam soils with traces of lime and clay on slopes facing south-southwest at 380-400 metres above sea level. e vines are an average age of 17 years and have been trained in the Cordon method at a density of 4500 to 5000 per hectare.
Vinification and Aging: Grapes are soft-crushed and the must separated from the skins; fermented at 16-18° C for about 2 weeks in stainless steel tanks. e wine undergoes 100% natural maloladic.
The wine, of about 13% alcohol, matures for 6 months on the lees in tanks before being bottled and cellared until release.
Style and maturity: Chamonix Chardonnay on release has a bright straw colour with greenish highlights and an intense aroma that recalls ripe apples, lime and pears with hints of herbs and tropical fruit. Bright and steely dry in avour, the grapefruit and spice sensations are buoyed by zesty acidity that refreshes the palate through a smooth nish.
